Sauté the onion in a drizzle of olive oil until golden brown.
Then, add spinach and mushroom. Sauté until soft and no liquid left in the pan.

While the omelette is cooking, sprinkle crumbled feta over the top.
Once the eggs are cook to your taste, fold in half and serve.
